Crispy Chickpeas

Ingredients

1 lb chickpeas/garbanzo beans

olive oil

salt

seasoning

2 cups dried garbanzos

a couple glugs olive oil

2-3 tsp chili powder

1/2 tsp ground cumin

1/2 tsp salt

1/4 tsp smoked paprika

a shake of Trinidad seasoning

Directions

1. Soak chick peas overnight.
2. Drain beans and cook for 30 minutes with a pinch of baking soda. Test for donness.
3. Drain and allow to dry for 10-30 minutes.
4. Toss with olive oil and seasonings.
5. Bake at 375 for 40 minutes, stirring twice. Continue to bake until crispy, stirring every 5-10 minutes.


Note: 2 c. of dry chick peas makes one large cookie sheet of cooked chickpeas for baking.
